In 1951 eight of Yibin’s best traditional distilleries were consolidated into a single state-run distillery, the Yibin Distillery (Yibin Wu liang ye Distillery after 1959). Distilled from a blend of sorghum, rice, glutinous rice, wheat and corn, its baijiu quickly became the standard-bearer of mixed-grain strong aroma baijiu. -

Del Maguey Pechuga is made in very small batches in the village of Santa Catarina Minas, with 100% EspadÃn agave. The spirit is naturally fermented and distilled three times in traditional clay stills with bamboo tubing. A peculiar expression of mezcal in which apples, plums, red plantains, pineapples, almonds and even a chicken breast are used in the third distillation. -
